0.5 tsp ground fenugreek

2.5 tsp ground cumin

0.75 tbsp ground coriander seed

1 tsp ground turmeric

20 dried curry leaves

1 tbsp brown mustard seed

2 tsp red pepper flakes

1 tsp salt

0.75 tsp ground black pepper

Mix all ingredients in a spice mixer into a fine powder.

This makes a big batch so keep what you don’t need at the moment in a air tight jar.
