What you need

1.25 kg chicken breast
2 red bell pepper
2 packets of baby corn
1-2 red onion
8 tsp sugar
6 dl (600 ml) double cream
3 tsp vadouvan curry
3-4 tsp sriracha
2 dl (200 ml) mango chutney
4 garlic cloves

To serve:
Rice
Salad of your choice

Dice the chicken and fry. Put in a large oven dish and sprinkle with salt and pepper.

Chop bell pepper, red onion and baby corn. Fry together in the sugar. Pour the vegetables over the chicken.

Whisk the cream, mix in the curry, sriracha, mango chutney and the minced garlic. Spread over the chicken and veggies.

Bake for 20-30 minutes in 225ºC.

Serve with rice and a fresh green salad.

Nice and golden when finished

The original recipe “Flämtande uttern”, has sambal oelek, which is hard to find here. We substituted with sriracha instead. We also added the red onion, which is not in the original recipe.
