Tomato Sauce

1 onion, chopped
1 garlic clove, crushed
1 tbsp oil
4-6 fresh tomatoes, chopped (or 1 tin chopped tomatoes )
2 tsp tomato puree
0.5-1 tsp sugar
1 tsp salt
0.5 tsp oregano
1 bay leaf
black pepper

Fry onion and garlic with the oil until soft. Add the rest of the ingredients. Stir occasionally. Let cook for 10 minutes until the sauce thickens, add water if necessary (especially if you use fresh tomatoes).

Remove the bay leaf and mix the sauce until smooth.

Spread on top of pizza base or mix into a Bolognese.
