TwoPotato Curry

2.5 kg potato (Maris Piper)
2 large sweet potatoes
3 large carrots
3-4 red onions
1 large yellow bell pepper
1 large red bell pepper
200g cherry tomatoes (Golden Vittoria)
300g halloumi
2 tbsp curry
2 tbsp olive oil

To serve
Raita

Dice potato, sweet potato, carrot, bell pepper and halloumi in 2 cm pieces. Cut the onion in quarters.

Pour everything in a large oven dish. Add the curry and the olive oil and mix it all together. Add salt and pepper to taste.

Bake for 30-40 minutes in 200ºC.

Serve with raita.
