Vegetarian Burrito Bowl with Avocado Crema

2 heads of cauliflower, cut into florets
3-4 bell peppers of taste, sliced
1 large onion, sliced
0.5-1 dl olive oil
4 tbsp lime juice
1 batch taco spice

To serve:
Coriander
Avocado crema
Bean salsa
Rice
Romain lettuce

Preheat the oven and cook the rice.

In a large oven dish put cauliflower, onion and bell pepper. Mix with taco spice, olive oil and lime juice.

Cook in oven for 30 minutes or until the cauliflower is tender with crispy edges.

Meanwhile prepare the avocado crema and bean salsa.

Serve the roasted taco vegetables over cilantro rice, with the beans, lettuce and avocado crema.
