Whisk the egg white with the sugar in a bowl. Put the bowl on a sauce pan with water. Heat it up to 60-70°, stir all the time.
Whisk again to full volume. Pipe or click unto an oven tray. Pour or sprinkle your flavouring over and bake for 150ºC for 4 minutes. Let cool on a grid. Keep the meringues in a jar with air tight lid.
