100 g butter 1 dl (100 ml) sugar 1 dl (100 ml) brown sugar 0.5 ml vanilla powder 2 dl (200 ml) flour 0.5 tsp bicarbonate of soda 0.5 tsp salt 2 dl (200 ml) crushed corn flakes 2 dl (200 ml) oats 1 dl (100 ml) desiccated coconut 1 egg 25-50 g baking chocolate
Mix butter, sugar, brown sugar and vanilla until puffy. Mix flour, bicarbonate of soda and salt. Add the flour mix to the batter. Add cornflakes, oats, coconut and egg. Make balls, the size of a walnut and put on an oven tray. The dough should make about 45 cookies.
Bake in 200°C for about 10 minutes.
Let the cookies cool on a grid. Melt the chocolate and sprinkle over. Unless you prefer the chocolate chopped and mixed with the oats before baking.
Cornflakes cookies are our favourite summer road trip treat. For picnic we always chop the chocolate and mix it in as the chocolate on top easily melts and makes a mess.
