Oskar’s Tray Bread

 1 big    2.5h   250°C     30 min    1.5h  

4 tsp dry yeast
1.5 l water
1.5 tbsp salt
Ca 3.5 l flour

Mix most of the flour with yeast and salt in a large baking bowl. Add the finger warm water (37°C). Mix well. Work your dough until smooth and shiny. Let raise under a kitchen towel for 30 minutes.*

Butter an oven tray (30×40 cm). Mix the dough and add flour if necessary, but let the dough be a little loose when you pour it into your tray. Let raise for another hour, covered with a slightly wet kitchen towel.

Bake in the bottom of the oven for about 15 minutes in 250°C. Turn the oven down to 175°C and bake for another 15 minutes. Place the ready bread on a grid and let cool under a kitchen towel. Dived in four pieces.

With oats: Exchange your flour to 700 ml oats and about 3 l flour. Let the oats soak in the water for a couple of minutes before adding the other ingredients.

* The dough gets very big when it raises so if you use a machine you might want to pour it into a large bowl before leave it to raise.

Easiest bread you can make. Doesn’t need a lot of kneading. Perfect fresh as a side or a delicious sandwich. It is a big bread so make sure you freeze some so it holds.
