Thai Style Fish

1.f kg white fish (e.g. cod or haddock)
1 leek
1-2 red peppers
2 cans coconut milk
1 tbsp curry (Thai style)
0.5 tsp chilli powder
2 garlic cloves, crushed
1 tsp coriander
1 tsp salt

Put the fish in an oven proof dish, cover with chopped leek and pepper. Mix the spices with the coconut milk and pour over the fish, make sure everything is covered. Oven bake until fish is fully cooked.

Serve with rice.
