Dried Allspice Berries
Dark Brown Sugar
refined white sugar with more molasses added in. A stronger, more intense flavour. Light and dark brown sugar can be used interchangeably.
Garlic
Ginger Root
Scotch Bonnet
colour range: yellow to scarlet red. Can also be orange, yellow, peach, or even chocolate brown. Heat 150,000–325,000 SHU
Spring Onion
Fresh Thyme
White Wine Vinegar
White wine that has been fermented and oxidized into an acid with a lightly fruity flavour.
