Ham

All types of ham start out as a roast cut from the hind leg of a hog. This is called a fresh ham. Before it’s prepared, it is no different than any other pork roast. To become ham, the pork is aged, cured, smoked, and/or cooked.
Kassler

Kassler (Kasseler in German cuisine) is a cured and slightly smoked cut of pork loin. It is fully cooked and can be eaten as is, but is also prepared as part of other dishes.
Bacon

Bacon is a type of salt-cured pork made from various cuts, typically the belly or less fatty parts of the back.
Prosciutto

Prosciutto crudo (often just called prosciutto) comes from the hind leg of the pig. It is salt-cured and air-dried for months, making it safe to eat without cooking.
Pancetta

Pancetta is seasoned, salt-cured meat made from pork belly
