Raw cacao powder is made by cold-pressing unroasted cocoa beans, while cocoa powder is the ‘raw cacao’ that’s been roasted at high temperatures.
Cacao has a higher nutrition value than cocoa as the molecular structure changes during the roasting. Among other health benefits it is high in antioxidants and magnesium. Cocoa powder often has sugar and diary added, while Cacao is often branded as vegan. Cacao butter is the natural fat from the cacao bean, high in Omega 9 (Oelic Acid).
