Thai Fish

4 cloves garlic
To serve

8 portions basmati rice

Thaw the fish and cut in pieces. Boil the rice.

Cut leek, chilli and garlic. Squeeze the juice from the lime.

Heat the oil in a big pan. Add curry, leek, chilli, garlic and lime juice. Let cook for 2 minutes.

Stir down the coconut milk and fish sauce, let bring to a boil. Add the fish and let simmer for 8 minutes, or until the fish is done.

Add salt and pepper to taste. (Garnish with fresh coriander.)

Serve with rice and carrot sticks.
